Christmas Russian Tea Cakes Recipe
These Russian Tea Cakes are a traditional Christmas dessert perfect for the holiday season. Also known as Snowballs or Mexican Wedding Cookies, these cakes are buttery balls coated in powdered sugar. This is a quick & easy recipe you will enjoy making with the whole family. Here is what you’ll need before you get started:
Ingredients:
1 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped nuts (walnuts or pecans)
Powdered sugar, for rolling
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Find a baking sheet and place parchment paper on top.
Grab the butter and sugar and mix together in a large bowl until light and fluffy - make sure to beat the butter as well. Once finished, add the vanilla extract until well mixed.
Now, in a different bowl, mix the salt and flour with a whisk. Slowly add this flour mixture to the butter and sugar mixture until a dough develops. Once finished, stir in the chopped nuts.
Grab a baking sheet and place the dough after rolling into 1-inch balls.
Bake for 12-15 minutes. Monitor the cookies and take them out once the edges are golden brown. After removing the cookies, leave them to cool down for at least 5 minutes.
Before they cool down completely, coat the cookies in powdered sugar. Leave them to cool off again and coat them in powdered sugar one more time once they are cool.
Place the cooled cookies in an airtight container.
